Good kitchen knife set

We've started the process of slowing paring down all our kitchen appliances, dishes, etc. in preparation for full time RV'ing. I've got a list of everything that is going in the June garage sale and not coming back into the kitchen. One thing we're wrestling over is the kitchen knife set. We invested in a really high quality set a few years ago with the big block to hold them all. For those of you full timing, did you get rid of the knife set and just settle for a few knives? If you brought it along, do you store it in a cupboard or on the counters? Most of the stuff in the kitchen will be relatively easy to get rid of but after waiting a number of years to get a really good set, not sure I want to get rid of it as we downsize.

Jo and I have Cutco knives that we purchased way back 1969. Of that set, we've only had to replace one paring knife. It did not have a "block" for sitting on the counter, so ours resides in trays in drawers. They are arranged so that the most commonly used knives are in a top drawer and the others are elsewhere.

All really depends on how important creating in the kitchen is to you, I suppose. If you enjoy cooking and utilize your knife set, then why not keep it? We've seen some pretty slick knife racks folks have built into their cabinets. On the other hand, if your set is just a 'thing' you collected but don't really use, perhaps time to find it a new home.

For me, I didn't pick up an appreciation for quality knives until after I hit the road, and I've been assembling my set as I roam.

It's not as nice as the would block but when space is at a premium it helps!

great idea! Thanks for the input. We do use and value our good knife set, took us several years to invest in a good set and hate the idea of not having them available as we both love to cook.

I brought along a knife set that also sits in a wood block on the counter. I turn it sideways & it fits fine on the counter. I use it every day & didn't really want to get rid of it either.

I have a really nice set with block for storage. Since my son is a chef, he helped be get rid of the kitchen stuff and suggested certain knives to keep. Put those in a drawer where are easy to get to, the rest I wrapped in a towel and stored are in another drawer. The block weighs "a ton". We all know that weight is everything, so it had to go.

What we use is a long magnetic knife storage strip which gets screwed into a wall near the countertop I use for cutting. We found it at a kitchen goodies store, but Amazon sells them. They come in sizes from 8" to 20" long and are very reasonable. The magnetic is REALLY REALLY strong, so the knives do NOT fall off in transit.

It keeps drawers clear of sharp knives.
I can keep the many variety of knives I use regularly at my fingertips.
I keep the REALLY long carving knife on the back side towards the wall (there's PLENTY of room).
There is NO use of precious countertop space.
The knives are always at my immediate reach.

For us, it's worked really well and we have put one in every RV we have ever had.
The buyers always thanked us for leaving it behind

We use the magnetic strip like Terry & Candace in our travel trailer. Been bounced around some and never had a knife fall off. Perfect solution and does keep sharp knives our of drawers.

I am keeping the 2 knives that I use the most; my 8" Wustoff Santoku and a 14" serrated bread knife; plus a couple of smaller paring/boning knives and a cleaver. The rest of them have just cluttered up my knife drawer for years so I decided why bother keeping them.

I've always just kept mine in a drawer rather than a block although I suppose one of those magnetic wall mount things might be nice…although I would probably hate wasting the wall space so I think I'll start without it and consider it later if I don't like keeping them in a drawer.
