Starting a cargo trailer conversion (CTC) that will incorporate Solar power !
The Trailer I have is a 6x12 dual axle that I will pull with my Ford Powerstroke diesel.
I have 4 100w Grape Panels and looking to add 2 more. S3P2 or is it 3S2P ? LOL !
Also have a PowMr MPPT 60a controller, lots of various size wire and Will Prowse's Book, Mobile Solar Power Made Easy.
...and most importantly an Amazon Credit Card !!!

Six hundred watts of solar may be overkill. I’d consider wiring for 600 but I initially installing only 400. What is your proposed battery bank’s max amp hours?

You've got a good start with Will's book. I would take his advice and run with it. That said LarryW21 has a pretty good suggestion of starting with 400 watts and see if you need more. No need to spend money you don't have to spend. I would size the wire for 600 watts (50 amps) so you don't have to replace it if you go to 600 watts. I'm not sure what the size is but I'm sure it's in your book. Good luck.
