Does anyone know why I shouldn't be able to use a ~$30 HomeDepot single-pole dimmer switch instead of buying a ~$88 RV specific 15a dimmer switch?

I've replaced the 110V light switches with dimmers purchased at Home Depot in my 5th wheel.

If you are dimming 120vac lights in your RV I would think it would work. If you are dimming 12vdc lights you might have a problem. Most DC dimmers change the resistance, dividing the voltage to dim the light where AC dimmers chop the AC signal to reduce the voltage.

They're the LED lights in the living room, so I assume they are DC. I just can't see spending $80+ for a single dimmer.

LED's are a different animal. Dimmers for LEDs work by pulsating the DC and provide more or less time "on" depending on how much light is desired. As mentioned, 120V AC dimmers for the house won't work, but neither will resistive 12V dimmers. A quick search of a favorite shopping site for "12V LED dimmer" yielded the following:

LED's are a different animal. Dimmers for LEDs work by pulsating the DC and provide more or less time "on" depending on how much light is desired. As mentioned, 120V AC dimmers for the house won't work, but neither will resistive 12V dimmers. A quick search of a favorite shopping site for "12V LED dimmer" yielded the following:
