What is your favorite recipe for lunch/dinner when only camping one or two nights in route to your destination?

We're like Bill & Diane, leftovers or sandwiches. Nothing that has to be cooked. Heck, we don't even put out our front slide for overnights.

Agree with Bill regarding leftovers. Another simple favorite if we don't have leftovers are the easy skillet dinners from the freezer aisle at the grocery store such as PF Chang's or other prepared foods I don't normally buy but are simple to make. We've also found some really good, microwaveable dinners at Trader Joe's in the freezer section. Again, not something we buy very often but works well for meals on the road.

I make Shredded Pork in the crock pot and then have it for our lunch stops. We have a generator and a few minutes in the microwave with the genny on and a warm hot lunch is ready. I also pre make some potato sald or cole slaw and have that as well. It will last easily for the couple travel days !!

Leftovers. It's very common for us to do a crock-pot of something the day before travel day (unless we are dry camping) so we have an easy meal for the next couple days after landing someplace.

Alie does a stir fry with the leftover meats. Cuts them into bits size pieces, scrambles an egg and chops it into bit sized pieces, adds a frozen vegetable mix, precooked rice, and covers it for 10-15 minutes. Seasoning to taste, your choice of whatever, we like the traditional soy sauce, Srircha sauce, zesty Italian, or some off the wall stuff she makes. It's simple, quick, and easy.

.....seriously, we don't travel much with our RV and when we have, we stopped and set up in an RV park or campground. However, in the last few months we have made a trip from Colorado back to Oklahoma and twice to Idaho. If possible before hand, Jo fixes up a meat salad (ham salad, turkey salad, chicken salad) mix and we take that along in our vehicle, especially if we decide to make the trip all in one day. A quick stop for fuel allows us a few minutes to throw together sandwiches with the meat salad, and perhaps some chips from the convenience store where we fill up.

Well we did some frozen pizza-pop kind of things from Wallyworld. Threw them in the Breville........And was just like downtown.
