I have gone and done it. I invited my in-laws and Sister's in law family to the campsite for Easter Lunch/dinner. Since we are weekenders, I know I can prep at home and go. I am taking the big crock pot for the ham and using the grill for shrimp (we are on the Florida/Alabama coast) but I am looking for suggestions on how to make this a great Easter without having the big kitchen I have at home.
I know that this will be my first of 2014 holiday in our new travel trailer...so all ideas and suggestions are welcome.
We will probably leave most of the 4 legged babies at home on this trip except the dog. And maybe 1 kitty, or 2 or ...

We often cook for up to 20 people when out in our RV. We cook just like we do at home. We bring the big pots and pans with us when needed.
Between the 4 burner stove and oven plus microwave in the RV and a combination of crock pots and an outside BBQ grill we are able to cook whatever we want. For Easter, usually we have two meats (ham & pork loin), a veggie dish (Corn or Green Beans), baked beans and/or mashed potatoes, bread of some sort, and homemade dessert or store bought. We prepare the night before as much of it as we can and bring a large cooler and ice to keep stuff cold if our refrigerator gets too full.
The day of the meal we start cooking and then heating with a schedule so that most items are hot all at the same time.
I bring an EZ Up Awning, banquet table and folding chairs so everyone can sit to eat in the shade if it's hot. If it's cold we build a fire or use an electric heater depending on restrictions.
Throw-a-way heavy duty paper plates, plastic cups and utensils for easy clean-up.

Roaster ovens set up outdoors would bake ham or anything else you need baked. Prepare as much as possible at home that can be iced down and finished that day. Crock pots to warm foods are great too. Paper goods and ready made deserts to finish it all off. I hope it all goes well. It is so nice to be outdoors in the fresh air. That makes everything taste better. Good luck, I am sure all will be great.
