Just put 2 new 6 volt batteries in series...should I get another pair and hook them up in series/parallel? What is best?

This is not a "yes or no" question. There are people who get along great with one 12 volt deep cycle battery, others need 8 golf cart batteries.
How big are these (golf cart batteries?), how will they be charged (cheap converter, expensive converter, large inverter/charger, truck alternator), where are they located in your RV, are you going to dry camp, do you have an inverter? Much more info is needed.

Whether to add batteries certainly depends on how much capacity you need. IF you are adding batteries you should (must) add batteries of the same exact type and capacity. So that is 6 volts, same brand and model number. Purchase two identical 6 volts batteries and wire those two in series. Then those two are connected to the other two in parallel so that you have 12 volts. You shouldn't add new batteries to an old battery bank. Within 6 months is OK IMO. But if you mix battery types and age it will cause the all the batteries to have a shorter life.
