So I have setup my 2008 Honda CRV to tow behind my 1998 Fleetwood Flair 26' MH. I followed the owner's manual on running it thru all the gears ( automatic), then put it in Drive for 5 seconds, then into neutral for 3 minutes then shut off the engine, My question is, if I stop for gas, or stop at a rest area do I have to run thru all that again with the Tranny after driving for a few hours?

Check the owners manual. I believe they state, at least for the 2013, that you should repeat the process every 300 miles. That equates to about every six hours of towing. If we stop at a rest stop for a lunch break well run through the process even if it's shorter than the 300 mile interval.

My 2010 crv owners manual says every 8 hours, and not to exceed 65 mph. Exceeding the requirement can't hurt

As Selah said, it should be in your owner's manual since it has changed in small ways over the years. We towed a 2002 for over 100,000 miles and 10 years by following the procedure with no issues. For 2002, it was repeat every 8 hours, so we would run it again at lunch if we knew it was a long travel day.
