We just purchased a new 5th wheel with a Sharp microwave/convection oven. I have never used one before but am excited about the possibilities. The manual says it if fine to use metal or aluminum foil pans for convection or combination cooking but I'm wondering if it might make sense to go with mostly silicone bakeware since it would work with the oven, the microwave and convection cooking and also be lightweight. I have some inexpensive silicone pieces that I don't like too well. I have been reading about some higher-end silicone products called ORCA that seem to get good reviews. Has anyone seen or used this bakeware? Or do you have other suggestions? Many thanks.

We don't currently have a convection oven in the RV, but do have one in the house. I LOVE it! Use it just like you would any other oven, just adjust either the cooking time or temperature down a little and keep checking till you figure out what works for what dishes. Generally I adjust the temp down 25 degrees for things like pot roast and adjust the time down 5 min for baking things like cookies.
As far as the silicone bakeware, I like the ones I have with one exception. They are not the easiest to get REALLY clean without a dishwasher. If you are going to use them I strongly recommend going with the more expensive, better quality ones. I saw some nice sets on Overstock.com the other day. I'm thinking about getting some silicone muffin cups to use instead of the paper ones. They seem pretty cool.

Silicon bakeware can be had for reasonable prices at outlet malls so you can check the quality and save money. We roll ours up and store them in plastic freezer bags. Ckerr: Diane loves the silicon muffin cups as small serving bowls, like for dipping and condiments like sour cream. They come in their own storage container.
