If I understand correctly, electric trailer brakes are OFF unless the tow vehicle brakes are applied. That means that when the trailer is unhooked at a campsite, the brakes are off. Wheel chocks are then the only means of keeping the trailer from rolling away, right?

Correct. And be sure and chock front and back of the wheels on both sides.

We use a product called X-Chock. We use them between the wheels, one on each side of the rig, and have been very happy with them. Do not believe the prices you see on-line since I got mine from Camping World for at least half the on-line price quotes from Amazon and the like.
The good things about the X-Chock are 1) they are well made and sturdy, 2) they lock the wheels to prevent wheel roll, and 3) they lock front and back tires together so that provides additional stabilization. I would not be able to get all three from those simple plastic V-blocks that sit on the ground.

We've been using Rotochoks and have been very happy with them They really lock the wheels firmly.

I didn't mention the between-wheel chocks like the roto-chock because if they get a single axle trailer like the "egg" models, those wouldn't apply. But, if the trailer is a two axle trailer, those type of chocks also help in reducing movement, even with just walking in the camper.
