I have a 6 lb (2 rib) standing rib roast planned for dinner and since this is the first one I've had to cook in a convection oven, I could use pointers please. What temp? How long per pound for rare to medium rare? Favorite method/recipe? Thanks!

As for recipe I like to make up a mixture (my grams would of said poltuce but ) of spicey mustard, garlic, thyme, and rosemary to crust the rib roast with.
